best spent 8 minutes of my life

I discovered  www.skinnytaste.com and all its capabilities this week.  It's effing amazing.  No other way to put it.  I created this pinterest board:  April 16 - 22 Meals , went to Skinny Taste and pinned 5 days worth of dinners.  On Skinny Taste, I registered for the Recipe Box {all you need is your email address and a password}, and added the recipes that I pinned to my recipe box, and then created a Shopping List.  This is the AMAZING part.  I printed off a shipping list that included all of the ingredients needed for every single one of the recipes.  It made shopping an absolute breeze.  

All Ingredients Needed.  Check.  
Recipe.  Check.  
Easy, paperless access to recipe.  Check.  
Best part:  Creating my meal plan and the shopping list took me about 8 minutes.  
Score 10 for the home girl!

Last night I made the Huevos Rancheros.  Yum,Yum,Yum,YummmYUM.  Fast.  Easy.  And Light.  Under 200 calories, per the recipe.  {I added avocado, so mine were prob a bit more than 200 calories}.  It was absolute magic to know exactly what ingredients were needed, to know exactly where to go for my recipe {my pinterest board}, and to have all of the directions right there all nice and tidy on my laptop.

I forgot to buy the green chili's the recipe called for
{yes, they were on the list but I couldn't find them easily at the store so I gave up},
and instead I sauteed diced tomato, onion, and sweet peppers in pam

Seriously.  Amazing.  
highly recommended.

I have extremely big hopes for my new method of "meal planning".  
so far, so good.

ps.  I made the Asian Chicken and Baby Greens with Beets, Goat Cheese, and Candied Walnuts from my board Monday night and it was awesome.  The salad?  To.Die.For.  Honorable mention:  I roasted the beets. By myself.
